Garlic, smashed Eggplant, cut in 1" cubes
Bread, half inch thick

Bread, half inch thick

Place garlic and olive oil in a medium pan. Sauteé the eggplant over medium heat, add salt and pepper. Cook for 6-7 minutes, or until soft. Let it rest for 2 minutes. Spoon over the garlic bread.

Try it with a slice of fresh buffalo mozzarella on the side.
