Heat some olive oil in a pan with lots of freshly ground black pepper. Cook the pasta in boiling water until al dente. Spoon a little ladle of the pasta water into the pan. Add cheese. Drain the pasta then slowly add it to the pan until the pasta absorbs the cheese. Toss quickly, shave a little pecorino on top and serve immediately.

This is a slightly dry, sharp-tasting dish.
