Take the crust off the bread and dry in the oven at 300 degrees for about 15 minutes. Peel the tomatoes and roughly chop. Heat the vegetable stock, add the tomatoes, garlic, the bread, half of the basil, half of the olive oil, salt and pepper.

Bring to a boil and simmer very gently until the liquid is reduced to a quick thick consistency. Add the rest of the basil, the rest of the olive oil. Before serving drizzle with some good Extra Virgin Olive Oil.
